KTVE Region 10 - KARD FOX 14
INGREDIENTS:
1 pound crawfish tails, cooked
1 can Rotel tomatoes
1 package large tortilla shells
1 package shredded cheddar (as much as you like)
non-stick spray
PREPARATION:
Saute the crawfish in the Rotel.
In a separate pan heat 1 flour tortilla for 1 minute.
Add 1/8 of the crawfish mixture and as much cheese as you like.
Fold the tortilla in half and continue to heat it.
Flip it.
Heat it until the cheese is completely melted.
This recipe makes 8 quesadillas prepared 1 at a time.
